We’re having a cookout Wednesday night for our bible study group and I wanted to make something fun and quick. I came up with these tasty little cookies and here’s the recipe:
Preheat the oven to 375o
1 box of Cherry Chip cake mix
1/3 cup of canola oil
1 tsp. almond extract
a small bowl of powdered sugar
Because I don’t like washing my cookie sheets, I line them with either a Silpat or baking paper. Put them in the oven for about 6-10 minutes. Mine took closer to the 10 minute mark because I didn’t measure out exactly 1 teaspoon of batter.
DELICIOUS!!! I ended up with exactly 27 cookies, but here again, that’s because I didn’t measure the cookies. If you use a teaspoon scoop you should end up with about 3 dozen of these little delights.
PS. You can mix and match any cake mix with any flavor extract, i.e. White cake mix with Coconut extract, Chocolate cake with Almond extract, Yellow cake mix with Banana extract, Strawberry cake mix with Strawberry extract, Yellow cake mix with Rum extract, Red Velvet cake mix with Peppermint extract, or even French Vanilla cake mix with Orange extract. The options are endless.
